This bottle of sparkling Rosé is made entirely using the estate's Meunier, using the Saignée method (which more or less means they're pulling a small amount of the first, free run juice from the typically red Pinot Meunier grape). Without applying any pressure, they avoid extracting bitterness and fully focus on the delicate fruit and floral aromas.
