The Kristancic Family has been tending to their vines in Ceglo, right on the border between Slovenia and Italy's Friuli for almost 200 years. During the UUSR occupation of Slovenia, the Kristancics were one of only five families who refused to sell their high quality grapes to the State Cooperative, opting to make their own, illegally sold wine.
Today the family is more defined by their desire to push the boundaries of winemaking technique, experimenting with a wide variety of bottlings that are unfined and unfiltered, including a classic method sparkling that's not disgorged. Pairing this boundary-pushing technique alongside organic farming yields wines that are polished and precise, yet have a real sense of liveliness.
This bottling is made entirely from Pinot Grigio (which is called "Sivi" in Slovenia) that is allowed to spend 1 week macerating on its skins before spending a year resting in neutral oak barrels.
The result is a wine with some serious texture, a mixture of bright fruit, and a lingering spice on the finish from both the Sivi and the Oak that it's allowed to rest in.
